I have been craving pancakes for a while now, while half of me is saying eat them, the other half is saying…..  watch your diet! Well I can honestly say I have found a good protein pancake recipe. Turn a naughty indulgent breakfast, into a lean, mean, tasty, treat. The difference is that this childhood favourite contains slow-releasing carbs. It has plenty of fibre, with a juicy amount of protein. Its tasty, healthy and a clean bulking up breakfast meal with protein pancakes.

Protein Pancakes Fitness Diet Recipe

Ingredients

1 Cup Oats (or other grain)
2 Whole Eggs
5 Egg Whites
2 Scoops Protein Powder
1 Cup Berries
2 tbsp Peanut Butter
1 Banana (chopped)
Cinnamon (dash to taste)
2 tbsp Coconut Oil

Instructions

Cook the oats as per instructions and add the eggs and egg whites. Beat slowly .  Carefully  add the protein scoops, berries, banana, and peanut butter. Stir until completely mixed. Tap a few sprinkles of cinnamon to the mixture. You can add sweetener (not sugar) if you prefer. Heat up the pan, and add coconut oil on a high temperature. Spoon in the mixture…. making average size pancakes. Flip when bubbles appear. Let them cool. Add additional healthy toppings (fruit or peanut butter) and enjoy!
